In 2014 we completed the chain by refurbishing part of Podere Le Casacce - the ground floor - to create our family pasta factory.
A rural, organic pasta factory just outside Siena, surrounded by our fields and 5 minutes from the village of San Rocco a Pilli, easy to reach from Siena and the local area, with a shop for direct sales of our products. Here you'll find our crops turned into authentic organic products that are completely local.
Our organic shop is a sales point and a meeting place for our local customers, tourists staying in our guest houses or in other accommodation nearby, to whom we offer a discount on our products.
Our stop is a Coldiretti Punto Campagna Amica, where all the products are Italian, rural and home-produced; those who come to shop here can see how we work, what we grow and how we process it by visiting our factory and making "hands-on pasta" with us.
In our factory, everything is done by hand; pasta production is artisan, without the use of machinery or shaping machines; long pasta is rolled by hand, cut with knives and turned manually.
We wanted to make a product which, as well as being organic, would retain the properties of the wheatgerm, be 100% artisan and very different from industrial products.
We are farmers and pasta makers, and in both these activities we've chosen high-quality production and healthy methods in order to obtain a non-industrial product made in small batches. Every week we grind the durum wheat for our pasta; every 10 days we make fresh or dried pasta which is distributed and sold through our channels. We don't produce standard items and we don't have a large warehouse full of products; only small batches, produced within the past few months.
Perhaps this is what distinguishes us and what our customers are beginning to value.
When you buy a bag of our flour or pasta, you can see from the batch number that it has been ground or made just a few weeks or even days previously. We have no intention of expanding our family pasta factory and making it industrial; our aim has always been to work with small batches and gradually gain the trust of our customers.
Our pasta is sold to local customers, private individuals and companies, shops selling organic loose goods, farming consortiums and farmers' markets on the Campagna Amica circuit, and the HoReCa sector.
Our lines of dried pasta are distinguished by the colours of their packaging, which is hand made.
Our factory also produces loose pasta, with far less packaging, to minimise the use of packaging and offer high-quality, organic pasta at an affordable price.
"Lo Sfuso del Pastificio" is dried pasta in several shapes, made with stoneground flours, legumes and grains. It can be ordered by private individuals, restaurants and ethical purchasing groups, and by shops selling loose products.
Our factory produces several varieties of cereals, from San Carlo wheat to durum wheat, the ancient Senatore Cappelli variety, monococcum farro, barley, millet, legumes and organic extra virgin olive oil.
All our cereals and also our legumes are processed using a stone mill to make type 2 organic flours; these are not refined flours, they are semi-wholegrain or wholegrain and retain all the properties of the grain, the germ, the bran and all the minerals.
We are organic farmers: we produce the raw material, process it, pack it ourselves and seek to satisfy our end consumers, whether they’re individuals or companies; we provide various types of pack from 500 g to 1 or 2.5 kilos and larger packs for ethical purchasing groups.
Our pasta factory can manufacture for third parties, as long as the flours provided are certified organic, or we can produce certified organic lines using our own brand ingredients.

You can find our organic products in our shop at the factory in Vigliano Bio, at Coldiretti Campagna Amica markets in the provinces of Siena and Florence, in Tuscan shops specialising in organic products, in organic sections of major Tuscan wine shops and and online in our Bioshop.
We produce fresh artisan pasta, without egg
and 5 lines of artisan dried pasta, without egg, using type 2 stoneground flours and bronze dies; it is dried at low temperature and packaged by hand.
